Scale Prevention for Steamers & Combi Ovens

Steam equipment is one of the most expensive pieces of equipment to maintain in a back-of-house operation. Failures can be caused by poor or non optimised water quality.

Blocked blow down drains and deposit build up are mostly due to poor water quality and commonly lead to increased energy consumption.

3M Purification offers solutions to these issues together with other failsafe features ensure water is always available and excessive service calls and increased operational expenses are avoided.

There are two ways of generating steam.

  • Firstly Boiler based systems - these use a boiler to heat water to produce steam which is then in passed to the heating chamber. Minerals remain in the water in the boiler tank which is normally flushed on a cyclic basis to remove build of minerals.
  • Secondly, a Direct heating platform - this is where the water is sprayed directly onto a hot surface and converted directly into steam. This is the method employed in flash steamers and can even involve spraying water directly onto hot surfaces in the cooking area. As all the water and its contents are sprayed onto a surface, whatever is contained in the water can be deposited onto the surface or 'carried' by the steam.

When choosing your treatment it is important to understand how the steam is being generated.

Flash steamers using direct injection can be very sensitive to scale formation as stated they vaporise all the water to steam so a treatment solution that reduces the levels of Hardness and preferably Total Dissolved Solids (TDS) are preferred. It is not advised to use an inhibitory based treatment such as polyphosphate or treatments which leave the Hardness in the water. Reverse osmosis can be sized for a wide range of water requirements. Solutions such as SGLP-RO, SGLP2-BL, TFS450 models dependent on daily usage rates.

3M Water Filtration's reverse osmosis units reduce or eliminate scale and mineral shards that often lead to the failure of steamers and combi ovens, one of the most expensive pieces of back-of-house equipment to maintain.

For boiler based systems with low to moderate hardness scale inhibition solutions can offer a cost effective solution, as these can work to reduce to keep scale soluble in the boiler which is then flushed out in the flush cycle. Our SF18-S model is an option.

Cationic resin based treatment systems are designed to reduce the level of hardness in the water. Weak acidic based solutions such as our ScaleGard Pro range target the temporary hardness, where as Strong acidic based systems such as used in Softeners will reduce total hardness. These provide a good solution to both methods of steam generation, however may be limited due to capacity on high volumes. Resin systems are not recommended when chloride is present in the water as corrosion issues can occur. This can be again especially prevalent in flash based systems if the water is sprayed directly into the cooking/ heating chamber.

Scale Reduction

Scale build up in hard water areas causes equipment down time, reduces efficiency, and affects both water level and temperature controls. We estimate that 3mm of scale build up can cause 25% energy loss in addition to unwanted and costly service calls.

Scale Inhibition

For hard water areas we have polyphos based scale inhibition filters that dose polyphosphate into the water to coat areas where scale may form. This provides high-quality water while inhibiting scale growth in the system and unnecessary downtime and service calls.
